Cranberry Cheese Spread

If I were intelligent, I would spread my posts out for the week, rather than cramming them in one night. But at special request from my digital scrapbooking hero, here is a cranberry spread that I got from my sister, who is my home entertaining hero. The spread has been a hit both times I made it.

8 oz cream cheese, 1 Tbs orange juice, 1/3 cup pecans or walnuts. Mix these 3 ingredients together.

1-1/2 cups fresh cranberries coarsely chopped
4 green onions (scallions)
1 heaping Tbs canned jalepenos chopped
1-1/4 cup sugar
2 tsp ginger
3-4 Tbs fresh cilantro
Mix the second batch of ingredients together and refrigerate for 4 hours, THEN combine with the first set of ingredients.

Top with cranberries and cilantro, serve with crackers.

Debbie, if you're reading this, thank you! I did try to adjust those pics, but Blogger keeps puttin them in thee side by side even though the html indicates they are stacked. Maybe I will just have to delete those imagages and post them one at a time in the future. I also read on Google that it's an IE issue and that not all viewers will see it looking all wonky. SO now I just need o go back to my old htms info and figure out where to put in my blog header again. Sigh....time for a new one anyway :)

Week 3 of half marathon training

This week brought very cold temperatures that caused a challenge for some of my runs. It is almost impossible for me to stay comfortably warm when it gets below 20 degrees. I did my first hill workout, which is meant to strengthen a different set of muscles and increase your speed. I did that on the treadmill on Monday because the weather was dangerously wet and we were in a flood state--I decided not to risk getting drenched by passing cars. The rest of the week had runs ranging between 3 and 5 miles. My week culminated with a 6 mile "long run". I had to put that off on Saturday because the temperature hovered around 14 degrees, and the weatherman promised a balmy 20 degrees on Sunday! I really don't like running on Sunday--it is a full day of church and family dinner and activities and I am usually too pooped out to take a long run. I Have a Dream....

Dreams come in all forms, from thoughts about how your life will turn out, to wishes about what type of car you'll drive one day to having your perfect house and so on. I would say that typically I'm not much of a dreamer. I tend to be more of a realist, certainly looking forward to things to come, but generally living practically, in the moment. I'm noticing as I grow older though, I do seem to be developing a dream of sorts--one that would become a mission, one that would recognize a passion, one that would establish a sense of purpose. I'm finding that as I live my day to day experiences, although I'm happy and content, I'm also ready to find that sense of purpose in life, the thing that makes me jump out of bed in the morning ready to dig into the job that is custom-designed just for me.
